✨ Boursin Tomato & High-Protein Pasta Bake

Ingredients:

  • 1 package mixed mini tomatoes (I used a colorful variety for extra flavor + color)

  • 1 container Boursin Garlic & Herb cheese

  • 2 tbsp olive oil

  • 2 tbsp minced garlic (or to taste)

  • Salt & pepper to taste

  • 1 package high-protein pasta (any shape works—penne, fusilli, rigatoni, etc.)

  • 1–2 cups frozen broccoli florets (no need to thaw!)

  • Baby spinach (a few generous handfuls, folded in at the end)

  • Optional: fresh herbs (thyme or rosemary), red pepper flakes, lemon zest for brightness

Instructions:

  1. Preheat oven to 350°F (175°C). Use an oven-safe pan or baking dish.

  2. Add mixed tomatoes, frozen broccoli, minced garlic, and olive oil to the dish. Season with salt and pepper, toss to coat, and place the Boursin cheese in the center.

  3. Bake for 25–30 minutes, or until tomatoes are blistered and the cheese is soft and melty. Let rest a few minutes.

  4. Meanwhile, cook high-protein pasta in salted water until al dente. Drain and reserve a little pasta water (just in case you want to loosen the sauce).

  5. Mash the roasted tomatoes, broccoli, and Boursin together into a creamy sauce.

  6. Add cooked pasta to the baking dish and mix until everything is well coated. Use a splash of pasta water if you want a silkier texture.

  7. Fold in baby spinach while still warm so it wilts perfectly. Add herbs, chili flakes, or lemon zest if desired.

  8. Serve hot and enjoy!

Notes:

  • Want more protein? Add chickpeas, chicken, or ground turkey.

  • Greek yogurt can be stirred in for extra creaminess.

  • Works great as meal prep—leftovers are delicious!
