🌮 High-Protein Fiesta Wrap

🧑🍳 Ingredients
For the filling:
1 lb lean ground turkey or beef
1 can (15 oz) black beans, drained and rinsed
1 cup corn (fresh, frozen, or canned)
1 red bell pepper, diced
½ small red onion, diced
1 tsp olive oil
1 packet (or homemade mix) taco seasoning
¼ cup water or broth
Salt & pepper to taste
For the wrap:
Whole-grain or high-protein tortillas
½ cup plain Greek yogurt (as a protein-boosted sour cream alternative)
½ cup salsa or pico de gallo
¼ cup shredded cheese (optional)
Handful of chopped spinach or romaine
Optional: avocado slices, lime juice, or hot sauce
🔥 Directions
Cook the base:
Heat olive oil in a skillet. Add ground turkey/beef and cook until browned.Add the veggies:
Stir in onion, bell pepper, corn, and beans. Sauté 3–5 minutes until veggies soften.Season:
Add taco seasoning and water. Stir until everything is coated and simmer 2–3 minutes.Assemble:
Spread Greek yogurt and salsa on a tortilla. Add filling, greens, and cheese if desired.Wrap & enjoy:
Fold like a burrito, slice in half, and serve with lime wedges or a side of roasted veggies.
