🌮 High-Protein Fiesta Wrap

🧑‍🍳 Ingredients

For the filling:

  • 1 lb lean ground turkey or beef

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn (fresh, frozen, or canned)

  • 1 red bell pepper, diced

  • ½ small red onion, diced

  • 1 tsp olive oil

  • 1 packet (or homemade mix) taco seasoning

  • ¼ cup water or broth

  • Salt & pepper to taste

For the wrap:

  • Whole-grain or high-protein tortillas

  • ½ cup plain Greek yogurt (as a protein-boosted sour cream alternative)

  • ½ cup salsa or pico de gallo

  • ¼ cup shredded cheese (optional)

  • Handful of chopped spinach or romaine

  • Optional: avocado slices, lime juice, or hot sauce


🔥 Directions

  1. Cook the base:
    Heat olive oil in a skillet. Add ground turkey/beef and cook until browned.

  2. Add the veggies:
    Stir in onion, bell pepper, corn, and beans. Sauté 3–5 minutes until veggies soften.

  3. Season:
    Add taco seasoning and water. Stir until everything is coated and simmer 2–3 minutes.

  4. Assemble:
    Spread Greek yogurt and salsa on a tortilla. Add filling, greens, and cheese if desired.

  5. Wrap & enjoy:
    Fold like a burrito, slice in half, and serve with lime wedges or a side of roasted veggies.
